Celluar Peptide Cake with mint frosting (from Star Trek TNG)

This month at our group I decided to do something to celebrate the 50th anniversary of Star trek. I managed to get my hands on a fantastic cook book by Cassandra Reeder called the Geeky Chef Cook Book. It’s a fantastic cook book and went down well at the post diagnostic support group and it’s for that reason I won’t be showcasing any more recipes from the book as I want people to go out and buy the book.

If you’ve ever wanted to make food from Harry Potter , Game of Thrones and Doctor Who this is one for you. By the way while the recipe looks and sounds hard it’s actually easier than expected.


Ingredients

320g plain flour
320g sugar
4 teaspoons baking powder
¾ teaspoon salt
170g unsalted butter, plus extra for greasing , (at room temperature)
4 free-range egg whites
1 egg
245g vanilla yoghurt
2 teaspoons vanilla extract/paste

for the frosting

1 ½ cups confectioners sugar
2 tablespoons milk
1 tablespoon shortening
½ teaspoon vanilla extract/paste
½ teaspoon mint or peppermint extract
blue food coloring
black food coloring


Method

  1. Preheat the oven to 180°C/ 350°F/gas 4. Grease a cake tin or baking pan

  2. In a large bowl, combine the flour, sugar, baking powder, salt

  3. Add the butter and mix until crumbly, add the egg whites and then the whole egg and beat well

  4. In a separate bowl whisk the yoghurt and vanilla extract together and then pour into the batter and beat until fluffy.

  5. Pour the batter into the prepared tin and bake for about 30-40 minutes or until a skewer inserted in the centre of the cake comes out clean.

  6. Let the cake cool and whilst that is happening prepare the frosting

  7. Combine all the frosting ingredients in a bowl with the exception of the blue and black food colouring and beat until you reach a creamy consistency (add more confectioners sugar if the frosting is too thin)

  8. Divide the frosting between 2 bowls and in one bowl add the blue colouring and in the other add the black food coloring and mix well until you get a good colour on both of the frostings

  9. Spread the 2 coloured frostings over the cooled cake in that Star Trek style and serve
