Spiced Apple cake

I really like the Hairy Bikers style of cooking and their shows are highly entertaining. I have a special soft spot for their dieting books mainly because there is no gimmick to it and no secret formula that clearly won’t work. It’s just eating less exercise more and be smart when you cook. It also come up with cleaver ways to not cut out things like lasagne or curry from your life and that includes Cakes and I chose this one from their second dieting book Eat for Life which I highly recommend and believe me you won’t believe this is only 229 calories a slice


Ingredients

Oil for spraying
750g Bramley Cooking Apples (about 3 or 4 at most)
1 tablespoon Fresh Lemon Juice
Zest of ½ Lemon
250g Self Raising Flour
1 teaspoon Baking Powder
1 teaspoon cinnamon
1 teaspoon mixed spice
2 large eggs
100g Demerara Sugar
200ml semi skimmed milk
100ml sunflower oil
½ teaspoon sifted icing sugar


Method

  1. Pre heat an oven to 190°C and line cake tin with baking paper and spray a small amount of oil.

  2. Peel and cut the apples into quarters. Remove the core and thinly slice them and toss with lemon juice in a bowl (this will preseve them while you do the rest).

  3. Mix the flour, baking powder, cinnamon and mixed spice in a bowl.

  4. Whisk the eggs with 100g of sugar, the milk and sunflower oil in a separate bowl.

  5. Pour the wet ingredients into the bowl with the dry ingredients and sir lightly until well combined.

  6. Toss the apple in the cake mix and pour into the prepared cake tin.

  7. Sprinkle 2 tablespoons of sugar over the cake mix and bake in oven for an hour.

  8. Let the cake cool for 10 minutes and then remove from cake tin and slice up.

  9. Serve with half fat crème fraiche.
